India is famous for the variety of cuisine served within the bustling country. Be it north Indian or south Indian cuisines, one can find the most spectacular and mouthwatering dishes here in India. Today I wish to share with the Flaming Vegan community a recipe of healthy vegan Indian pancakes. India has many styles of making pancakes, but this is one of the quickest, healthiest, and most delicious snacks. It can be made in just twenty minutes! One can add their favorite choice of veggies and herbs, and make a plethora of variations. Each pancake contains around 14 – 15 grams of protein, depending on its contents. Food in India is famous for its herbs and spices, so don't be shy.
- 2 cups chickpea flour
- 1 cup water
- 3 tomatoes, chopped
- 2 onions, finely chopped
- 2 green chilies, chopped
- ¼ cup green peas
- 3 garlic cloves
- 1 tsp ground coriander powder
- ¼ tsp garlic powder
- ¼ tsp ground black pepper powder
- Salt to taste
- Olive oil for cooking
- Basil leaves
STEP 1: Take a non-stick skillet and heat a couple of table spoons of olive oil over medium heat.
STEP 2: In a mixing bowl, combine chickpea flour, 1 cup water, finely chopped tomatoes, green peas, onions to create a batter.
STEP 3: Once the batter is ready, add the finely chopped green chilies, ground coriander and salt to taste.
STEP 4: Check the consistency of the batter. It shouldn't be too thick or too dilute. It should be able to coat the back of your spoon.
STEP 5: Now take 1 cup of the batter and pour it into the pan. Cook for just a few minutes on both the sides, to brown.
STEP 6: When the edges become crisp, you will know that the pancake is ready.
Serve the pancake with sauce, chutney, or your choice of veggies. Enjoy!
