Fast and Easy Healthy Hot Chocolate

In the Northern Hemisphere, January is the coldest of all winter months. This aggravating fact makes our resolve to be healthier that much harder. I don’t know about you but when the temperature meter drops well below 0ËšF all I’m dreaming about are steamy cups of creamy lattes and hot chocolate with marshmallows on top.

Most health-conscious people start off the year with juice cleanses and green smoothies but for us northerners the promise of a cold refreshing drink is not conducive to getting out of our warm comfortable bed in the morning.

While a nice cup of tea and a bowl of comforting oatmeal are a good option, sometimes I want something a bit more decadent.

Since I’m not ready to give up on my start of the year health kick just yet I came up with this healthy hot chocolate that I’m sure you will love.

You can enjoy it guilt free on those mornings where you need the extra motivation to get out of bed and face yet another snowstorm.

For this delicious drink, you will need:

5 Medjool dates or 10 smaller dates

1 banana

¼ cup of cacao nibs or 2 tablespoons of cacao powder

1 cup of boiling water

1 cup of vanilla soymilk

¼ cup of raw cashews

Once you have gathered your ingredients you will need to:

1.       Boil water using a kettle or a pot

2.       Make sure the soymilk is room temperature

3.       Put all the ingredients in your blender

4.       Blend on high until the liquid is steamy

If you are using a high-speed blender you do not need to boil the water first. Simply blend the ingredients until the container is warm to the touch.

I hope you give this drink a try. It is sure to warm you up and provide you some much needed energy to face the cold!

*Note: If you don’t have a high-speed blender, you can pre-soak the dates and cashews for a smoother drink.
