Extra Flaky, Extra Indulgent Vegan Pie Crust

A short post to give you all the secret to the best vegan pie crust. I am not going to lie to you, the secret doesn't make it the most healthy pie crust....if you want that you should head over to a no bake nut and date crust. This crust however does mimic the rich decadence of non vegan pie crust and does the trick when you really need to impress someone with how rich and delicious a vegan lifestyle can be.

 

Extra Flaky, Extran Indulgent Vegan Pie Crust

makes one 9 inch pie crust

6 TB earth balance, softened *have a little extra softened set aside

1/4 cup tofu cream cheese, such as toffutti, galaxy foods or follow your heart, softened

1 cup, plus 1 TB whole wheat pastry flour (or white if you prefer)

1/8 teaspoon salt

1 heaping TB granulated sugar of choice (I like coconut palm)

 

In a bowl combine sugar, flour and salt. In a seperate bowl mix cream cheese and earth balance. Using a pastry cutter or fork chop butter blend into the crust till it is throughly saturated. If it is still dry, add a little more earth balance. Scoop the dough up into a ball, wrap in saran wrap if desired and refrigerate till time to use the for your recipe. When throughly chilled and ready to use, roll out between parchment paper and follow directions for your pie recipe.

    Ummm... the '6 TB' of earth balance means what - tablespoons? Voted! This recipe does seem very tempting. I wouldn't do it often but would surely enjoy it! My new piece is They Say It's Misplaced Pride. Looking forward to your comments!
