Easy Tofu Scramble for Lazy Chefs

I love brunch. My Sunday morning never feels quite complete without it. However, I am quite the lazy cook. I like simple recipes with few ingredients that I can whip up quickly when company comes to visit. This tofu scramble is my go-to recipe for those times where I want to wow my guests without spending too much time in the kitchen.

For this recipe, you will need:

· 1 block of firm or extra firm tofu

· 1 small onion

· 1 bell pepper        

· 1 teaspoon of salt

· 1 teaspoon of fresh black pepper

· 1 teaspoon of garlic powder

· 1 teaspoon of dried parsley

· 1 tablespoon of turmeric

· 1/3 cup of nutritional yeast

· ¼ cup of unsweetened soy milk

· 1 tablespoon of oil

Here is what you will need to do:

1. Finely dice the onion and the bell pepper

2. Crumble the tofu with your clean hands or a fork in a bowl

3. Heat up a pan and add the oil

4. Sauté the bell pepper and onion for a few minutes until the pepper is soft and the onion translucent

5. Add the crumbled tofu and stir in the spices

6. Cook for 5 minutes

7. Add a splash of soy milk and mix well

Here you have it, a moist, bright, and delectable scramble. This dish is good on its own but you can eat it with tempeh bacon and roasted potatoes for a full brunch experience. It is also delicious cold in a breakfast sandwich for those early weekday mornings. Feel free to add a handful of spinach or kale for a healthier version. You can also skip the oil and sauté the onion and bell pepper in water or vegetable broth. Either way this recipe is sure to add some sunshine to your mornings.
