This red lentil soup was my savior last night.
I wanted something comforting and filling after having to brave the cold and walk the dark, snowy streets of Montreal to come home after work. Yet, I did not want to cook.
If you are anything like me, your patience for making elaborate meals is as short as the winter daylight hours.
Not only is this recipe perfect as it takes about 30 minutes from start to finish but it is also delicious and nutritious.
A serving of this cheesy soup packs 15g of healthy plant based protein while being low in fat and it is a good source of vitamin B12 with the added nutritional yeast.
Here is what you will need for this simple meal:
1 cup of red lentils
1 teaspoon of salt
1 teaspoon of freshly cracked pepper
½ cup of nutritional yeast
1 teaspoon of onion powder
1 teaspoon of garlic powder
3 cups of water
Here is how to do it:
1- Rinse the lentils well under cold water using a strainer
2- Mix the water and the ingredients in a pot
3- Bring everything to a boil on medium-high heat and cook for 10 minutes
4- Decrease the temperature to low heat and let it simmer for 15-20 minutes
Although red lentils fall apart and make any dish creamy by default, you can add a cup of coconut milk if you would like even more creaminess.
Needless to say, fresh crunchy French bread is the perfect companion to this hearty winter meal.
This recipe makes about two to three servings so you can also eat it for lunch the next day. It tastes even better reheated. That is, if you can keep yourself from eating it all on the same night.
