A nice fresh, sweet tomato tastes so good mixed with an avocado and cucumber. A chewy nut like cashew, added is both a surprise to the
taste buds and a protein kick. You can make this a lovely lunch or dinner by adding tofu or tempeh.
- 1 ripe cucumber
- 1 ripe avocado
- 1 ripe tomato
- 2/3 cup of cashews
- 1/2 cup of your favorite salad dressing (I like red wine vinaigrette)
1. Cut first three ingredients into bite size bites.
2. Pour first three ingredients into a medium-sized bowl. Toss gently.
Let stand in refrigerator.
3.When you go to serve, pour salad dressing into mixture and toss again gently. If you use the vinaigrette you can put it on before hand and let the flavor mix in.
4.) Add cashews.
