It seems like home-made gifts are all the rage these days. You can share your favorite recipes with the ones you love by preparing most of the ingredients for them beforehand. These are going to be my Christmas gifts this year. I think this is a great gift, on top of everything else it’s low-budget. Personalize it with a card and hand written instructions and you are golden!
I took a 3/4L jar and packed it tight. Inside, bottom to top, are:
- 1 3/4 cups of Spelt flour
- 1 teaspoon baking soda
- 1 tablespoon of vanilla sugar
- Pinch of salt
- 1 cup brown sugar (150ml)
- ¾ cup shredded coconut
- ¾ cup rolled oats
- ½ cup coarsely chopped dark chocolate.
Place ingredients in the jar carefully using a funnel. Tap the jar to set the flour and even it out with a spoon. Add all the other ingredients, smooth the edges and you are done. Make sure the ingredients are firmly packed, so the layers stay in place.
Decorate the jar and add instructions.
To the dry ingredients from the jar, add:
- ¾ cup (vegan) butter, melted and cooled to room temperature
- ¼ cup vegetable oil or 1 tablespoon corn starch mixed with 2 tablespoons water or 1 egg (replacer) or a mashed banana
Mix all the ingredients together in a bowl, chill the dough. For large cookies take about two tablespoons of batter, form in a ball and flatten on the baking sheet.
Bake at 350 F for about 15 minutes.
You can replace the coconut, oats and chocolate with other ingredients, for example: walnuts, hazelnuts, chocolate chips, raisins, cranberries, cinnamon or anything else you can think of that you’d want to eat in a cookie. Or you can think of the person you are making this for and include their favorite things.
Make an extra jar for yourself because you’ll want to make the cookies for you at some point too.
