Cinnamon-Strawberry Breakfast Tostada

What's round, flat, sweet, crunchy and delightfully fruity?  An alien spacecraft?  A holiday fruitcake?  Tee hee :)  Why no, it's the cinnamon-strawberry breakfast tostada! 

I am like a kid in the morning, I don't like to eat much and have to be fairly well enticed into it, all the while keeping things simple so I don't abandon mission breakfast altogether. 

This fruity wake-up call is adult and kid friendly, which is great for someone like me who frequently nannies!  I hope this one is helpful to all the busy moms and kids out there that want some fast-healthy-delicious breakfast options. :)

 

Cinnamon-Strawberry Breakfast Tostada

1 cup fresh organic Strawberries, sliced

1 Pita Bread, split into two thin layers

1/2 tsp ground Cinnamon

1 tsp organic Virgin Coconut Oil

2 tsp raw organic Honey or Agave

2 tbsp sliced Toasted Almonds

2 tbsp unsweetened large Coconut Flakes (optional)

1 tsp whole brown Flax Seed (optional)

 

Wash, dry, top and slice strawberries, set aside. 

Slice pita into two thin layers, gently toast in toaster oven or toaster until firm.  Spread coconut oil over warm pita halves and sprinkle with cinnamon. 

Scatter fresh berries evenly over two pitas, drizzle berries with honey/agave.  Top with garnish of sliced almonds, coconut and flax, whatever you fancy. 

 

*Enjoy immediately so pita stays nice and crisp.

*Fresh herbs are always a nice addition, like mint, or possibly lavender or basil. 

*Have the kids help put them together, it's a fun and interactive way to start the day together!

*Perhaps just to share half with a good friend.  :)
