I am back with another dish containing two favourite ingredients of mine: capsicum and of course, garlic. I have learnt this dish from my mother who I consider to be the most innovative cook I have ever come across. She combines ingredients in such a way that we never deem possible and churn out one tasty dish after another. There are only three main components of this dish but still it tastes delicious.
Ingredients: Capsicum: 2 nos Gram (Chickpea)Flour: 2 tbs Garlic: 4 cloves finely grounded Salt: to taste Turmeric Powder: ¼ tsp Red Chilli Powder: ½ tsp Coriander Powder: 1 tsp Cumin: ½ tsp Oil: 1 tsp
Method: Roast gram flour in a flat pan for 5 mins till it turns light brown and keep aside. Cut the capsicums length wise (not too thin) and remove the seeds. Heat oil in another pan and add garlic as soon it becomes hot. After frying it for 1 min., add the spices i.e. cumin, turmeric powder, red chilli powder and coriander powder. Add few drops of water so that the spices do not burn. Fry this mixture few minutes till the oil starts to separate from it. Now put the sliced capsicum and keep sautéing this till capsicum becomes tender. At this point add the roasted gram flour and salt and keep stirring it for few more minutes. You will notice that gram flour gets stuck to the capsicum to give it a nice coating. Your dish is ready. Serve it hot with any type of flat bread.
Capsicum helps in lowering triglycerides thereby increasing metabolism. It also contains Vitamins A and C (antioxidants) and has anti-inflammatory properties. It has laxative effect which stimulates stomach secretions and thus improves digestion. Gram flour or chickpea flour not only provides gluten free dietary fiber but is also a good source of Vitamins A, K and B-complex. So go ahead and try it.
