- 4 cups chopped organic broccoli
- ½ cup of chopped organic green onions
- 2 cups chopped organic celery
- 3/4 cup sunflower seeds or almonds
- 1 cup of raisins
- 1 cup of vegan mayonnaise (see recipe below)
- ¼ cup of red wine vinegar (or taste preference)
- 4 tbsp sugar
- 2 ½ tbsp fresh organic lemon juice
- ½ tsp celtic sea salt
Combine vegan mayonnaise, red wine vinegar and sugar in a small mixing bowl. In a separate large mixing bowl combine chopped organic broccoli, chopped organic green onions, chopped organic celery, sunflower seeds or almonds and raisins. Pour organic lemon juice over the veggie mixture and stir well.
Add the vegan mayonnaise mixture and the celtic sea salt to the veggie mixture and still well. Refrigerate for one hour before serving to allow the salad to chill.
Vegan Mayonnaise Recipe
- ½ cup soy milk
- 6 tbsp safflower oil
- 3 tbsp lemon juice
- ¼ tsp Dijon mustard
- ¼ tsp salt
Combine all ingredients in a blender except for lemon juice until mixture has a smooth consistency. Slowly add lemon juice. Mixture should thicken as lemon juice is added. Store in sealed container in refrigerator.
The mayonnaise mixture may be added to fruit salads and sandwiches as well as cooked foods. Various flavors may be added to the base recipe. Please feel free to experiment. I would love to read your flavor ideas below under comments.
