Black Bean and Avocado Fiesta Salad

Prep Time: 15 minutes

I'm lucky enough to live in the same city as Rip Esselystn, so I brought this dish to one of the Engine 2 potlucks. It's simple, fresh and all the ingredients go into one bowl. If you happen to have any left over, it keeps pretty well overnight in the fridge.

 

Ingredients

  • 1 15 oz can of black beans
  • 1/2 bunch of scallions, chopped
  • Roma tomatoes (as many as you like, I use 2) chopped
  • 1 avocado, cubed
  • 1 lime
  • 1 red onion, chopped
  • Cilantro (as much or little as you like)
  • Salt and pepper to taste

 

1. Drain and rinse the beans. Pour them into a bowl big enough for the rest of the ingredients

2. Chop your scallions, red onion and tomatoes. Add them to the bowl

3. Cut open the avocado and cut each side into cubes

4. Scoop out the avocado with a spoon and add to the bowl

5. Add the juice of 1 lime

6. Add salt and pepper to taste, then mix

7. Chop your cilantro and mix into the bowl

You can eat this by itself, over tortilla chips or as a taco. Enjoy!
