There are so many things that can be done with apples. The most common thing people do with them, is...you know it, apple pie. I truly do love apple pie. However, the apples pies you see at the grocery store are not very healthy. Of course, now a days it is very possible to actually eat a healthy apple pie. Some people cook it, and that usually takes a while, others eat it raw (you can find many recipes for raw apple pies) which can be a bit on the expensive side according to the ingredients you will need. I don't mind spending money on good food, but like most people, I'm on a budget, so I like to get the most for my money. I came up with a delicious dish that resembles apple pie and takes very little time to do it. This dish was inspired by watching a video, which helped me to come up with my own apple pie!
Here is what you will need:
Ingredients: This recipe is for 2
* 2 Big Granny Smith Apples (you can use your favorite apple)
* Lots of cinnamon
* Maple Syrup, Agave, or Honey (if you're a beegan)
* Graham Crackers
* Cream cheese (this is optional + vegan cream cheeses are great!)
Peel the apples (you can leave the skin on if you want) and cut into wedges. Place apple wedges in a large bowl and sprinkle lots of cinnamon on them. Make sure you get cinnamon on all the apples. If you are using a sweeter apple you don't have to use maple syrup ( it wouldn't hurt to add some), but I love granny smith apples and because they tend to be more sour I add 2 teaspoon of maple syrup to the bowl of apples and cinnamon. When that is done, put the apple mixture in a baking pan (i use a square pan). This next step is completely optional, some people might not like the taste of cream cheese with apples but I do. So now, i cut chunks of cream cheese and just place them on top of the apples. Grab the graham crackers and crush them until they look like crumbs. It doesn't have to be perfect and you can also use a food processor for this. Sprinkle the graham crackers crumbs all over the apples and cream cheese until you have covered all of it. Once again it does not have to be perfect, if you don't want it all covered that's fine too, but i really like it crunchy. Drizzle about 2 teaspoons of maple syrup on top of the graham crackers and place in the oven at 350 for 20 minutes.
After 20 minutes, check the apples, if they are not soft enough, you can let them bake for another 5 to 10 minutes. I don't mind the apples being just slightly crunchy so 20 minutes is good enough for me!
Note: You can also use walnuts or almonds or both instead of the graham crackers, or you can use all three, it makes a great crust!
Let the dish cool for a few minutes but don't let it get cold. The best way to serve this is when is hot and with your favorite (vegan) ice cream!
