I’ve always enjoyed the different variations of oatmeal at all the breakfast joints we’ve visited. Specially knowing that there aren’t too many healthy options when eating outside home, this one is always a safe bet.
I do make it at home quite often with the same incentive of having a healthy breakfast. At home I use both steel cut as well as quick rolled oats whichever is available.
Here I’ve used steel cut oats simply because they are healthier and have a richer taste. Apples add their natural sweetness as well as the dash of vitamins.
Ingredients (Serves 2):
- 1 cup Steel cut oats
- Water 3 cups
- 1 Apple chopped
- ½ teaspoon ground Cinnamon
- 1 tablespoon Raisins
- ½ tablespoon chopped Walnuts
- 1 tablespoon ground flax seeds
- 1 teaspoon maple syrup (optional)
Put the water to boil. Then add the oats and allow it to come to a boil. Add the chopped apple and cinnamon and let it simmer. Stir in the walnuts and raisins. Cook until all the water is absorbed and the mixture becomes thick. Keep stirring occasionally. Mix in the ground flax seeds.
Add a teaspoon of maple syrup if you want to sweeten it further. I make do with extra raisins. Feel free to add almonds too if you prefer. And, you have a heart healthy oatmeal breakfast ready.
