Apple Pancakes (Vegan and Gluten Free)

Ingredients:

  • 2 cups almond flour
  • 2 tbs ground flax-seeds
  • 1 1/2 tsp water (combined -soak flax-seeds for 3-5 minutes)
  • 1 1/2 cups almond milk
  • 1/2 large apple peeled and grated 
  • 2 drops doTerra cinnamon

Instructions:

  1. Combine ingredients and mix well, adding a little more liquid or flour if necessary to achieve right consistency.
  2. Cook on hot griddle with coconut oil.
  3. Serve with pure maple syrup.

      It's hard to say how many, as it really depends on how big your pancakes are. However, for me it makes around 8-12 average size pancakes (about 4-5" in diameter)
