5-Step Vegan Gluten-free Chocolate Chip Muffins

Many of us think that baking is a difficult job. But in reality baking can be very easy. So today I’m going to share my favorite recipe of vegan gluten-free chocolate chip muffins which can be prepared within minutes. These muffins are extremely simple to prepare and are simply delicious. These muffins are soft from inside and the chocolate chips add crunchiness to the muffins. Let’s get started with these delicious muffins!

INGREDIENTS:

  • 1 cup flour
  • ½ cup oats
  • Salt to taste
  • 1 tablespoon coconut oil
  • 1 tablespoon lemon juice
  • 1 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ½ cup chocolate chips

 METHOD:

Step 1: Preheat the oven to 400 degrees Fahrenheit. Add the flour, oats, and almond milk to a bowl and mix well. Make sure that there are no lumps in the mixture. Step 2: Then add the coconut oil, powdered sugar, baking powder, salt, vanilla extract and lemon juice to the mixture and mix it well. Step 3: Now that the batter is ready, add the chocolate chips to the batter. Mix it well so that the chocolate chips are properly mixed in the batter. STEP 4: Now take the muffin molds and grease them properly. I am making 10 muffin molds, but you can take as many as you want. Now put the mixture in the molds. Step 5: Put them in the oven and bake them for 20 minutes. Check if the muffins are baked properly.

Serve the muffins once they cool down. You can store the muffins in an airtight container or you can store them in your fridge as well. You can add some more chocolate shavings or chips for decoration. Chocolate chip muffins are also perfect for a party or a family get-together. Happy baking!
