3 Filling Summer Salads

All too often, salads are a light fare that just doesn't fill you up. I like to make my salads a bit more filling, though, so they can be served on their own as lunch or dinner. If you'd like to make a delicious, filling salad, there are a few things to remember.

1. Include protein. You need some protein to feel full for longer. I like to use beans or vegan cheese. 

2. Mix the veggies. No one said salad had to be all lettuce. Make it more interesting and filling by including other types of veggies, too.

3. Add some carbs. Pasta is a great addition to a salad to fill you up. You can also use croutons or even rice to serve this purpose.

Salad is great for your health, but if you've been avoiding it because it's not a full meal on its own, it's time to take a closer look. Here are three tasty salads that will make you feel full. 

Every Veggie Salad

  • 2 tomatoes, chopped
  • 1/2 c. corn (cooked)
  • 1/2 c. peas (cooked)
  • 1 c. cauliflower, chopped
  • 1 c. lettuce, shredded
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1/4 c. olives, sliced
  • 1 c. vegan cheese, cubed
  • Dressing of your choice

Toss all the ingredients together and enjoy! This salad serves 2-4 people.


Grilled Tofu and Walnut Salad

  • 2 1/2 inch slices firm tofu
  • 2 Tblsp. vegan soy sauce
  • 1 clove garlic, minced
  • 1 Tblsp. basil, minced
  • 1 Tblsp. lemon juice
  • 1 c. walnuts
  • 2 c. iceberg lettuce, torn
  • 1 carrot, shredded
  • 1 green pepper, sliced thinly
  • 1 c. mushrooms, sliced

Mix the lemon juice, soy sauce, garlic and basil. Marinate the tofu slices for 2-6 hours. Grill until cooked through and cut the tofu into strips. 

Toss remaining ingredients together. Top with the slices of tofu and serve. 


Beet Rice and Veggie Salad

  • 1 c. cooked brown rice
  • 1 carrot, grated
  • 1 small onion, grated
  • 2 tomatoes, chopped
  • 1 c. peas, cooked
  • 1 c. raw beet, grated

Toss all ingredients and season to taste with salt and pepper.
