A few years back, I would always get excited for the month long Saint Patrick's Day celebrations. Seeing food and beverage items dyed green made me squeal with delight. My favorite treat was the Shamrock Shake from McDonalds. I would always make it a point to get one any time I passed a McDonalds in the month of March. I reasoned with myself, making me believe it was okay to get a shake here and there, because they were only around for a limited time. Unfortunately, what I did not know at the time was the dangers and risks associated with artificial coloring, or the cruel practices of the dairy industry. The very same coloring that was going into the food and drinks that I thought were the most wonderful, creative things, was unknowingly wreaking havoc on my body. Thankfully, almost two years ago, I began my research and made a committed decision to eat as clean as possible. I knew that even though I didn't crave that cholesterol laden, artificially flavored, saturated fat loaded shake anymore, I wanted to create something that I could treat myself to once in a while, that I didn't feel guilty about eating!
- 2 Cups Coconut Milk Ice Cream
- 2 fresh mint leaves crushed
- ½ cup unflavored dairy free milk
Blend together, and enjoy!
*I used green tea flavored coconut milk ice cream for the beautiful green color.
*If you would like a mint chocolate version of this shake, feel free to add in a handful of raw cacao nibs, or vegan chocolate chips before you blend! YUM!
